It seems like each January I find my mind wandering to warmer weather feelin’ beers. This year is no exception, and my wits turned to the Witbier style.
Nothing fancy here, just a straightforward representation of this OG hazy style. I have brewed this recipe (or something like it) a bunch of times now. The starting recipe comes from a BYO article.
Recipe: January 2021 Wit
Vitals:
Brewed 1/16/21 OG 1.045
Kegged 1/23/21 FG 1.010
Sensory notes:
Clean, yet hazy beer with bright carbonation. Color is pale straw. The coriander is barely present, and I suspect that it’s the yeast expression that takes over the palate here. Hints of lemon and super-subtle Belgian character are the main two flavors going on here. Mouthfeel is light, and the oats and wheat provide a soft drinking experience. This is probably the best Wit I have brewed.
